Ingredients
- 5 large red capsicums
- ½ tsp sea salt
- 4 garlic cloves, sliced thinly
- ½ cup extra virgin olive oil (or more, if needed)
- 1 tbsp white vinegar
- Fresh parsley, to garnish
Directions
- Preheat the oven. Set your oven to 200°C (or high setting) and line a baking tray with baking paper.
- Prepare the Capsicums. Place the red capsicums on the tray and drizzle lightly with olive oil. Sprinkle with a little oregano if desired.
- Roast. Grill the capsicums for 20 minutes or until the skins start to blister and blacken slightly.
- Steam for Easy Peeling. Remove the tray from the oven and cover the capsicums with baking paper and foil. Let them steam for 15 minutes — this helps loosen the skin.
- Peel and Cool. Once cooled, gently peel off the skins, starting from the edges. Discard seeds and stems.
- Marinate. Slice the roasted capsicums into strips and place them in a clean jar or container. Add the sliced garlic, sea salt, vinegar, and enough olive oil to cover everything completely.
- Store and Serve. Seal and refrigerate. Allow to marinate for at least a few hours (or overnight) before serving.
